Spring 2020 Quarantine Diaries Recipes

Downtime with Elizabeth Hay Photography is weird. I’ll be the first to admit it.

Stalls still need to be cleaned and horses still need exercise and care. Therefore that aspect of life is the same. My dog Hula needs her belly rubbed and my cat needs so much love. So far, all the same. I’ve still edited photos and I’ve actually been blogging! Miracle of miracles. As a result, stay tuned for more client blogs after this ridiculous one.

I’ve made three standout recipes since quarantine started. Therefore, I’m, fully aware I’ll be part of the #Quarantine15 club. But hey, I’m staying the F home and doing my part.

Recipe#1 – Blueberry Scones – Full Recipe on my Pinterest Board here. Follow me while you’re there and I’m sure I can continue to be a bad influence on your diet.

  • 1 1/2 cups Blueberries, fresh
  • 1 Lemon, juice and zest
  • 2 Eggs
  • 3 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1 1/2 tsp Salt
  • 1 cup Sugar
  • 1/4 cup Turbinado or sparkling sugar
  • 2 sticks Butter
  • 1/2 cup Half and half

As a result of joining the #Quarantine15 crew, “Downtime with Elizabeth Hay Photography” contributes my own creation. My husband makes a sandwich for himself for lunch everyday but cuts off the excess bread. He has a strict bread to meat ratio clearly. Therefore, I took the leftover bread scraps and decided to make homemade croutons for my dinner salads!

Recipe #2 – Homemade Croutons

  • Bread ends or scraps cut into cubes
  • 1/3 stick of butter
  • Three minced or crushed garlic cloves
  • 2-3 tablespoons of olive oil
  • Santa Maria Seasonings

I warmed the butter, garlic and olive oil together in the microwave if I’m being honest. Subsequently once melty, pour over the bread scraps and toss. Even distribution is clutch. Afterwards, sprinkle with the Santa Maria Seasonings. Then toss and sprinkle a little more goodness.

Spread evenly on baking sheet. Oven set to 350. Bake for about 15 minutes, tossing again at about 8 minutes. Since we are friends here, I’ll be honest – I ate a bunch fresh from the oven.

Recipe #3 – Super Awesome Sandwich

  • Sliced Sourdough bread
  • Fresh mozzarella
  • Avocado
  • Cooked Bacon
  • Lemon Pepper Seasoning

Firstly, toast bread. Secondly, lay bread flat and top with fresh mozzarella slices and broil for 8-10 minutes. Sprinkle with lemon pepper seasonings. Assemble with cooked bacon and avocado. Enjoy like a Mo Fo.
